The main traditional food in Eritrea is Tsebhi (stew), served with Injera (spongy flatbread made from taff, wheat, or sorghum). Tsebhi comes in the form of beef, lamb, chicken, fish and vegetables from spicy to very mild. The mildly seasoned tsebhi is called Alicha. Dining in Eritrea is characterized by the ritual breaking of injera and eating from the same plate, meals are typically shared, signifying the bonds of family, unity and friendship. The traditional way of eating is with your fi ngers, which in itself is a delicate art. A bite sized piece of the injera is broken off to pick up a mouth full of the chosen dish.
